This is fantastically flavorful and fresh soup. Ginger, lemongrass and fresh herbs make this eye opening.
Brown your pork and add cumin, ginger, lemongrass, garlic, red chili flakes, diced red pepper, salt and pepper.
Add your chicken stock and bring to a simmer and add mushrooms, chopped cilantro, soy sauce and fish sauce.
When serving, cook rice noodles seperately and place in bowl and then ladle the soup on top and garnish with sliced green onion, more fresh cilantro and chopped arugula.
