Comfort food made easy. Sauté the trifecta of onion, carrot and celery in butter and in this version add slivered mushrooms. Once your sautéed ingredients are heated through and softened add your chicken broth or vegetable broth and a thyme bouquet. Bring to a simmer and season with salt and pepper then add your “homemade” tortellini and cook until tender. Finish by correcting the seasoning – sometimes I add chopped escarole at this point. This with buttered baguette, is magic.
