Baked Wild Cod

Fresh cod is wonderful many ways but here this is an outstanding dish.

Preheat oven to 400F.

In your pan place your finely diced onion, shallots and parsley.  Pour your white wine in your pan just covering the bottom to make your lovely sauce.  On top of this place your cod.  Season with salt and pepper.  Now press your crust onto our fish.  This crust is made of fresh Panko bread crumbs, finely chopped parsley, butter, and fresh finely chopped dill.

I feed a lot of people so here I have three whole filets of cod.  You can buy and cook any amount.  This is great for a crowd as this dish cooks reliably and is pleasing to most.  IMG_1679

The sauce is wonderful and can be used to dress pasta or potato or anything you love with fish.

I baked this amount of fish for 40 minutes to have this result.  Yum!
