Homemade Tomato & Basil Roti Pizza!

Start by making your own crust of flour, a dash of salt and water. Mix to make your dough and set aside to let it relax a little. Roll it out and bake it until done but not brown.

Pizza sauce-you can use almost any sauce your imagination will allow. Here pictured is a sauce made of tomato sauce, paste, oregano, thyme dried basil, garlic powder and s&p.

I prep the pan with a spritz of olive oil. Place your crust on your pan and spritz it also with a bit of oil all the way to the edges.

Assemble making sure you treat the pizza evenly with your toppings and oil bringing everything to the edges of your crust. Your imagination again is the limit but here we have sauce, thinly sliced mushroom, thinly sliced fresh tomato, fresh basil (we’ve found this brightens everything up), fresh mozzarella (goats cheese is fantastic also), salt pepper, a little sprinkle of Parmesan (not too much or that’s all you’ll taste) and a final spritz of olive oil. Bake at 475 or hotter for 8 minutes or until you like what you see!

(You can use store-bought unleavened flat bread as an alternate.)
