Beef and Spouts

This is something we could eat everyday.  It’s a soupy, crunchy beefy dish served as is or with rice noodles or even mashed potato.  If rice is your thing it would be excellent with rice.  As follows:

Brown your ground beef with slivered onions, chopped celery, chopped ginger, chopped, garlic, salt and freshly ground pepper.   If you have lemongrass it would be excellent addition but this stands alone most wonderfully.  Now, all this is hot and ready to add your water and soy sauce.  Still simmering add your rinsed bean sprouts on top and cover and let simmer for 15 minutes.  Lift lid being careful not to let the steam hit your hand or your face and lift from bottom mixing the contents.  Serve like this or add chopped green onions and sesame oil.  It will take the addition of sliced mushrooms quite well.  Try it!

Ingredients

2 lbs ground beef

two large yellow onions slivered

3 tbsp grated ginger

4 cloves garlic finely chopped or crushed

3 stalks celery chopped

sea salt and ground pepper to taste

1/4 cup soy sauce or add less and let people add their own

6-10 cups fresh crisp clean bean sprouts
